Alexis Belton

General Manager & Beverage Director

Up until recently, Alexis was the bar director at the Aviary & The Office, located in the busy Fulton Market District of Chicago's West Loop. The Aviary has numerous accolades, such as a James Beard Foundation award for Best Bar Program, and has made top spots on the World's 50 Best List and nominations for Tales of the Cocktail Spirited Awards. She is also a prominent member of the Cocktail Apprentice Program, a mentorship program within Tales of the Cocktail. Originally hailing from Northern California's Bay Area, Alexis has spent her life surrounded by food and drink. Alexis found herself perpetually drawn to the restaurant industry, and she finally found her calling when she moved to New York City in 2011. She ran the beverage program for a well-known West Village haunt, and it was there she met her now-husband, Ed Tinoco. They left New York in order to challenge themselves and hone their skills at The Alinea Group. They have spent the last decade doing so and now return home to New York. Currently, she is the opening Beverage Director at Metropolis by Marcus Samuelsson, which is located inside the Perelman Performing Arts Center in downtown Manhattan, and has recently added the title of General Manager to her distinctions.
